Planting the Dream: Our Vegetable Garden in Spain

There’s something deeply satisfying about creating a garden from scratch—especially when it’s done with friends, laughter, and a shared love for the land. This spring, we finally broke ground on the vegetable garden at our Spanish country house, and what began as a patch of bare earth has quickly transformed into a thriving, living space full of promise and growth.

We weren’t alone in the process. Our good friend Sam, a passionate soil biologist, arrived with all the enthusiasm and knowledge we could have hoped for. He brought along Leonora, another brilliant soil specialist, and the two of them immediately set to work reading the landscape. Instead of forcing rigid lines or geometric perfection, they designed a layout that truly embraced the natural flow of the land: wide, curved beds with generous channels for water to run freely and soak deeply.

The approach was rooted in permaculture principles—working with nature, not against it. Nothing was planted in neat rows. Instead, we embraced the chaos and harmony of mixed cropping: companion plants nestled together, creating biodiversity that nurtures the soil and supports each other as they grow.

With the plan in place, we gathered our friends, rolled up our sleeves, and got digging. There was something magical about those early days—tools in hand, sun on our backs, and everyone working together with joy and purpose. The beds took shape slowly but surely, and we began by planting the foundation: trees, shrubs, and a beautiful border of aromatic herbs like lavender, rosemary, thyme, and sage. These not only add beauty and scent, but also attract pollinators and deter pests—a perfect start to our little ecosystem.

Then came the vegetables. Over the next couple of weeks, we filled the beds with a vibrant mix of spring and summer crops. We planted cabbage and cauliflower among swirls of carrots and beetroot, with lettuces tucked into shady spots. Peppers and tomatoes were scattered throughout, mingling with beans that will climb over handmade supports, and squash and courgettes that will sprawl and stretch under the sun. Everywhere you look, there’s something different popping up—each bed a little world of its own

One of our favourite parts was planting the mystery seeds—small envelopes gifted to us by friends from all over. We don’t know exactly what will grow from them, but we love that their origins are woven into our garden. Each one holds a story, a memory, a person we love.

Now, when we look out over the garden, it’s not just a place where vegetables are growing—it’s a space shaped by friendship, knowledge, and shared vision. The scent of herbs drifts on the air, bees are already exploring, and the first seedlings are reaching for the sun. It’s wild and imperfect and absolutely alive.

We didn’t just plant a garden—we planted a dream. And it’s only just beginning to bloom.
